The Flash Détente method, or thermovinification, uses high heat and rapid vacuum cooling to extract maximum color, concentrate sugar, and remove undesirable flavors in wine grapes. Flash Détente is particularly beneficial when winemakers are dealing with challenges in their grape harvests. When grapes are under-ripe, affected by mold, Botrytis, laccase, have undesirable flavors, or smoke taint, Flash Détente can be a game-changer.
Additionally, color and tannin extraction is maximized while Brix levels increase up to four degrees.
